Borscht is a very popular soup originated in Ukraine, it is mainly consumed in winter season. This dish usually includes beets, meat, cabbage and optionally potatoes. Although, there are many sorts of preparation of this recipe, the following are the two most important: hot borscht and cold borscht. Both dishes are beetroot-base recipes and very easy to prepare.

  • 2 onions.
  • 2 potatoes.
  • Butter.
  • 1 kg. Fresh beets.
  • 8 cup beef broth.
  • 3 Tbsp red wine vinegar.
  • Parsley.
  • 1 cup Sour cream.
  • Salt and pepper.
  • Pell and chop vegetables.

  • Fry onions in butter until tender, for about 5 minutes.

  • Add potatoes, beets and the broth after that bring it to a boil.

  • Cover for 2 to 3 minutes and continue cooking until the broth is deep red and potatoes are very soft.

  • Add beets and vinegar into the pan.

  • Stir in remaining bell pepper and season with black pepper.

  • Combine sour cream with horseradish in a small bowl.

  • Serve the soup with a dollop of the horseradish sour cream and a sprinkle of parsley.
