Kholodets’ origin is a mystery; however it is believed that this dish has its origins in the 19th century. Although preparation of this traditional dish is not complex, it is better to read carefully recipes before preparing it. On the other hand there is a great variety of this specialty in Russia, the most common Kholodets are made of poultry, meat or the combination of both of them.

  • 2 cow legs.
  • 2 carrots.
  • 2 eggs.
  • 1 garlic head.
  • Red pepper.
  • Salt.
  • Clean cow legs and cook them with plenty of water until the meat falls off the bones after that uncover and cool.

  • Pour out the broth, skim off fat from the surface.

  • Remove meat from bones.

  • Chop meat into small pieces and then put them into an oblong pan.

  • Add garlic, salt and pepper.

  • Pour enough remaining broth to cover the meat.

  • Cover and refrigerate overnight.

  • Serve in 1 inch slices sprinkled with flavored vinegar or lemon juice.
