Rassolnik is certainly one of the most traditional Russian soups. It is mainly eaten after parties, because it is very famous for being a surefire cure for hangovers. On the other hand there are many ways to prepare this dish, the most important are: homemade Rassolnik, Rassolnik with kidneys, Rassolnik with poultry giblets, Rassolnik grain, Rassolnik fresh fish and Rassolnik of fish balls.
INGREDIENTS:
2 potatoes.
2 carrots.
4 onions.
2 celeries.
Black peppercorns.
6 pickled cucumbers.
Parsley.
50 gr. Butter.
200 ml sour cream.
4 bay leaves.
6 tbsp rice.
Salt.
PREPARATION:
Peel cucumbers.
Cut cucumbers and put them into a pan with water and simmer for 10 minutes.
Cut all vegetables and wash the rice.
Simmer roots, bay leaves and peppercorns for 15-20 minutes.
Add chopped vegetables and rice into the pan.
Add the cucumbers.
Add butter, mix all together and simmer for 10 more minutes.
