Rassolnik is certainly one of the most traditional Russian soups. It is mainly eaten after parties, because it is very famous for being a surefire cure for hangovers. On the other hand there are many ways to prepare this dish, the most important are: homemade Rassolnik, Rassolnik with kidneys, Rassolnik with poultry giblets, Rassolnik grain, Rassolnik fresh fish and Rassolnik of fish balls.

  • 2 potatoes.
  • 2 carrots.
  • 4 onions.
  • 2 celeries.
  • Black peppercorns.
  • 6 pickled cucumbers.
  • Parsley.
  • 50 gr. Butter.
  • 200 ml sour cream.
  • 4 bay leaves.
  • 6 tbsp rice.
  • Salt.
    • Peel cucumbers.

    • Cut cucumbers and put them into a pan with water and simmer for 10 minutes.

    • Cut all vegetables and wash the rice.

    • Simmer roots, bay leaves and peppercorns for 15-20 minutes.

    • Add chopped vegetables and rice into the pan.

    • Add the cucumbers.

    • Add butter, mix all together and simmer for 10 more minutes.

    • Add Salt and parsley to taste.

    • Serve with sour cream to taste.
