Shchi is a delicious Russian soup very popular in Russia and Eastern Europe. Although there are many ways to prepare this soup, we can mention the three most common: Green Shchi, Sour Shchi and of course Vegetarian Shchi. Cabbage is the main ingredient for the preparation of this Russian dish. On the other hand there is a widely known saying about it: “Shchi and Kasha are our staples”.
INGREDIENTS:
Water, preferred broth.
400 gr. meat (beef, lamb or pork).
1kg. Cabbage.
6 onions.
2 carrots.
2 Tomatoes.
500 gr. potatoes.
Bay leaves.
Black pepper.
Garlic.
Parsley.
400 gr. sour cream.
Salt.
PREPARATION:
Cut tomatoes, onions, potatoes, carrots and the cabbage, in a pot combine all of these ingredients, cover and cook for 1.5 hours in 2 cup of boiling stock.
Fry chopped onions in vegetable oil and add to the pot.
Add beef broth.
Put tomato, pepper corns, Garlic and bay leaves into the pan; simmer for another 10 minutes and add to the pot.
Add cooked meat and let it simmer in the covered pan on low heat for about 2 hours.
