Shchi is a delicious Russian soup very popular in Russia and Eastern Europe. Although there are many ways to prepare this soup, we can mention the three most common: Green Shchi, Sour Shchi and of course Vegetarian Shchi. Cabbage is the main ingredient for the preparation of this Russian dish.  On the other hand there is a widely known saying about it:  “Shchi and Kasha are our staples”.

  • Water, preferred broth.
  • 400 gr. meat (beef, lamb or pork).
  • 1kg. Cabbage.
  • 6 onions.
  • 2 carrots.
  • 2 Tomatoes.
  • 500 gr. potatoes.
  • Bay leaves.
  • Black pepper.
  • Garlic.
  • Parsley.
  • 400 gr. sour cream.
  • Salt.
  • Cut tomatoes, onions, potatoes, carrots and the cabbage, in a pot combine all of these ingredients, cover and cook for 1.5 hours in 2 cup of boiling stock.

  • Fry chopped onions in vegetable oil and add to the pot.

  • Add beef broth.

  • Put tomato, pepper corns, Garlic and bay leaves into the pan; simmer for another 10 minutes and add to the pot.

  • Add cooked meat and let it simmer in the covered pan on low heat for about 2 hours.

  • Salt, parsley, sour cream and pepper to taste.
Black pepper contain a good amount of minerals like potassium, calcium, zinc, manganese, iron, and magnesium. Black pepper is one of the most important iron foods. It contains 1.4 milligrams of iron per 5 grams.
